Palace noodles, a specialty of Gaocheng, served as an imperial delicacy in the Ming and Qing Dynasties. It has the characteristics of thin and strong texture and good fire resistance.

Pour the tomatoes through boiling water, peel off the skin and cut into pieces.

Add water to the pot, add tomatoes and bring to a boil. Add noodles and cook over low heat for 3 minutes.

While the noodles are cooking, simmer the spinach, heat the oil in the wok, add the chopped green onion and stir-fry until fragrant.

Add spinach, light soy sauce, vinegar, and salt and stir-fry until spinach is cooked through, then turn off heat.

Pour the cooked spinach into the noodle pot and mix evenly.
