pounds of small flower crabs, cleaned and set aside.

Cut the dried chilies in the middle, slice the ginger, and cut the green onions into sections.

Add salad oil (a little more than normal cooking) into the pot. When the oil is hot, add dried chili peppers, onions and ginger, and stir-fry over high heat until the aroma is released.

Put the floret crabs into the pot and stir-fry over high heat. Add 1 spoon of sugar, 2 spoons of white wine, 1 spoon of dark soy sauce, and 2 spoons of light soy sauce until the crabs turn red.

After the crabs are fried red, add about 100 grams of boiled water, cover the pot and simmer for about 3 minutes. (You can also fry it directly without adding water. Add water and simmer for a few minutes to add more flavor).

After 3 minutes, stir-fry the crab soup until it is dry.

The crabs are small but plump.
