  1. There are a lot of pig skins saved in the refrigerator. Boil them in a pot under cold water for about 5 to 10 minutes. Use chopsticks to prick them until they are penetrated. (Some pig skins are a bit dry after being kept for a long time. Just soak them for a while longer.)

  2. Take out the pork skin and use a knife to scrape off the remaining fat on the inner layer. Especially the surrounding areas must be scraped clean and any remaining pig hair must be pulled out with tweezers. Rinse with hot water under running water and rub thoroughly.

  3. Repeat the first action and scrape the pig skin again, both inside and outside, be sure to scrape it clean! Don’t forget to scrape off the grease on the skin. Rinse again with hot water. This step is very important. To make pig skin jelly that is neither fishy nor smelly, this step must not be omitted.

  4. Cut all the meat skin into soybean-sized dices or long strips, whichever is more personal preference.

  5. I steamed all the cut pork skin into two portions. Steam one portion in an ordinary steamer for 1 hour; steam one portion in a pressure cooker for half an hour (prepare to try it to see if you can shorten the steaming time).

  6. Boil the water in a pot under boiling water to remove the fishy smell and oil (cannot be omitted). Remove and control moisture.

  7. Take a bowl of pork rinds and weigh it. The ratio of skin to water is: grams of pig skin X 2.3 = amount of water (g).

  8. Take a stainless steel basin, add 3g of salt, 260g of pork rinds, and add the calculated amount of 598g of water. The water should be heated and boiled, and the water temperature should not be lower than 40 degrees (this step is very important). Cover it with plastic wrap (to prevent water from flowing into the basin, I prefer a plate, which is environmentally friendly and healthy) and poke holes with toothpicks.

  9. After steaming over high heat for 1 hour, take it out and see if the surface is as clear as water.

  10. Don't stir it, let it cool naturally, then put it in the refrigerator. If you are pursuing a perfect demarcation, you can fish out individual pieces of skin that float but cannot be pressed down.

  11. Remove the frozen skin slices from the refrigerator. Shiny and elastic. Pair with some dipping water: minced garlic, vinegar, light soy sauce, salt, chili oil, decide according to your own taste, you can pour or dip it.

  12. This was steamed in a pressure cooker for half an hour. The soup is clear and the red color is caused by me adding 3 Sichuan peppercorns directly to the water😝😝. Stir gently and the taste will be the same as steaming in an ordinary pot. The taste has more aroma of Sichuan peppercorns.

There are many ways to make skin jelly, you can add preserved eggs, soybeans, etc. If making soybean skin jelly, when the skin jelly liquid is about to solidify, add cooked five-spice soybeans and stir with chopsticks. In this way, the skin jelly will not separate into two layers, and each space will be filled with skin particles and soybean particles.

  15. To make cherry blossom skin jelly, soak the salted cherry blossoms in advance. When it comes out of the pot, decan the clear soup into another clean container. When the liquid cools down, add the cherry blossoms and put it in the refrigerator to refrigerate. Check it after about 2 minutes. Adjust the position of the cherry blossoms in time. If it has solidified, it cannot be moved. The cherry blossom skin I made was not successful because I put a very clear and clear liquid into a pot and boiled it😭😭😭 Dear friends, please do not boil it, the liquid will become turbid after boiling😭😭For safety reasons, please heat it over water.
