Spinach finger cakes
Overview
This biscuit is specially made for my baby, who is now one year and two months old. I usually make some finger biscuits for him as a teething food. I have long wanted to make some vegetable finger biscuits for him, but it is difficult to dry vegetables, so I have not done so. ACA's smart oven can bake at low temperatures, which solves this problem. Use it to make dehydrated vegetables. Baking at a low temperature of 80-90 degrees can well retain the color of vegetables. The color of the prepared vegetable powder is very beautiful, and it is very useful for making biscuits, cakes, etc. Today I used spinach powder to make this finger cake, and my baby loved it. Generally, 2 eggs in finger biscuits need to be mixed with about 50 grams of sugar. It is not easy for babies to eat too much sugar. I only put 10 grams of rock sugar powder and very little sugar. The biscuits have a faint spinach fragrance, are healthy and delicious, and can be eaten by babies with confidence.

Steps
-
Prepare the ingredients. I powdered the rock sugar myself with a food processor. Spinach powder has posted a recipe before: dehydrated vegetables. If you need it, you can check it out
-
Crush the dehydrated spinach and sift it
-
Mix the sifted spinach powder and flour
-
Sieve to mix evenly
-
Pour the egg whites into a basin that is oil-free and water-free, and add a few drops of lemon juice
-
Add half of the rock sugar powder when whipping the fish eye foam, and then add it again when the egg whites are fine. I used less sugar and added it in two batches. If I used a large amount, I added it in three batches.
-
Whip the egg whites until they form stiff peaks, and the egg beater in advance forms a straight triangle
-
Beat the egg yolks and pour into the egg whites
-
Mix evenly by stirring.
-
Then sift in the mixed powder
-
Still using the mixing method, stir until there is no dry powder left
-
Put it into a piping bag and squeeze it into strips
-
When beating egg whites, set the oven to 160 degrees and preheat. I use the ACAGT400. The oven will beep to remind you when the preheating is completed.
-
The oven is preheated and the cookies are just finished. Put it in the oven, press the start button, and bake for 20-25 minutes
-
The baked biscuits are very crispy after cooling and have a melt-in-the-mouth texture, especially suitable for babies.
