Peel off the skin of an old taro with a knife.

Cut into strips. This method is easier to cook and suitable for frying.

Heat oil in a wok until green smoke comes out, add shredded taro and stir-fry.

Add salt and chili powder and continue to stir-fry. After a while, the water in the taro will be stir-fried. It is best not to stop stir-frying before this to avoid burning the pot.

Add half a bowl of water, cover the pot and cook until the water is reduced by half. Chop the shallots, add three-quarters of them to the pot, stir-fry, then add MSG and serve. The remaining green onions can be garnished with the finished dish or added to the pot entirely.
