Sassafras the potatoes and run them through cold water several times to remove the starch inside.

Cut celery with a diagonal knife.

Onion, ginger and garlic. Set aside.

Heat oil in pot and sauté until fragrant.

Add shredded potatoes and stir-fry.

Stir-fry shredded potatoes over high heat.

Then add the celery and stir-fry evenly and add the seasonings.
