Wash the razor clams, cut the peppers, red peppers and ginger into shreds, smash the garlic and set aside.

Heat oil in a pan, add red pepper, ginger and garlic and sauté until fragrant.

Add hot pepper and stir-fry.

Pour in the razor clams and continue to stir-fry. After the razor clams open, add cooking wine, vinegar and light soy sauce and stir-fry until fragrant.
