Cut the potatoes into thin strips, wash them with water to remove the starch and soak them in water for 5-10 minutes. Chop the garlic, chop the shallot into chopped green onions and set aside.

Cut the lean meat into shreds, add cornstarch and light soy sauce and marinate a little.

Heat the cold oil in the pan, add the shredded pork and stir-fry. When the shredded meat changes color, add the light soy sauce and garlic. Then add potatoes and sauté until soft, add salt.
