Soak and wash Huizhou plum vegetables.

Soak the fungus in hair and wash it.

Rinse the plum meat with water

Cut into thin slices.

Chop the pickles and put them together with the fungus and meat.

Chop into pieces, add cooking wine, light soy sauce, cornstarch and sugar and continue chopping. (Huizhou plum vegetables are salty, no need to add salt.)

Chop until all the ingredients are mixed together and the meat feels sticky.

Put it into a deep plate and use chopsticks to smooth it out, making it slightly thinner in the middle and thicker around the edges.

Crack an egg in the middle.

Put into pot of boiling water.

Steam over high heat for 16 minutes.

Remove from the pan.
