Chocolate Mille Crepe
Overview
Ordinary chocolate layer crepes use original whipped cream as the filling, and the taste is relatively average. Based on the fact that I had eaten chocolate whipped cream before, I changed the recipe of ordinary chocolate mille-feuille and added chocolate cream, which brings a richer flavor and better taste.

Whisk the eggs and beat them evenly

Add the sifted flour and cocoa powder in batches, add a little at a time and mix well, then continue to add the rest, so that there will be no small particles in the batter

Pour in the sugar and mix well

Turn on low heat, put a little butter on a paper towel and smear the pan, pour a large spoonful of batter into the pan, and turn it around to distribute the batter evenly on the surface of the pan. If the fire is too high, there will be a lot of bubbles in the cake, so the fire must not be too high. After one side is baked, continue to bake the other side.

Put the fried crepes on a rack and let them cool.

Repeat this to make about 13-15 crepes. After making them, it is best to seal them and put them in the refrigerator for more than 20 minutes until the crepes are completely cool.

Now start putting the crepes together one by one. Place a crepe on the bottom layer and apply a layer of chocolate cream (I have already written the recipe for chocolate cream, so I won’t repeat it).

Place a crepe and apply a layer of cream, repeat this more than ten times. Note that the crepe must be completely cold at this time, otherwise the cream sauce will melt immediately.

It doesn’t matter if the sides look uneven. In the end, you will use a spatula to spread the butter evenly.

After applying some more cream sauce on the last layer of crepe, use a spatula to spread the surface evenly (it doesn't have to be particularly smooth, because you need to sprinkle cocoa powder) and sprinkle a little cocoa powder, and it's done. The finished chocolate layer cake must be refrigerated for more than 2 hours to allow the cake and cream sauce to solidify together before eating.
