Wash the ribs and set aside.

Slice ginger and chop green onion.

Add water and cold water to the pot, add the pork ribs, add a spoonful of cooking wine and ginger slices to blanch the pork ribs, bring to a boil and rinse off the foam on the pork ribs with running water.

Heat oil in a pot, add ginger slices, star anise and scallions and stir-fry until fragrant.

Stir-fry the pork ribs for a while.

Add two spoons of light soy sauce, half a spoon of dark soy sauce, a spoonful of oyster sauce, and a spoonful of Haitian bean paste.

Stir fry evenly.

Add water to cover the ribs, bring to a boil over high heat, then reduce heat to medium and simmer until the ribs are tender.

When the soup becomes dry, add a small spoonful of sugar.

Just add chopped green onion.
