Pig's trotters is one of my husband's favorite dishes. This is also my first time making it, and I didn't expect it to taste good~

  1. Wash the pig's trotters and blanch them in water for about ten minutes. Boil out the blood and dirt.

  2. Have all ingredients ready. Slice the ginger, flatten the garlic cloves, and cut the white garlic into sections.

  3. After blanching, take the pig's trotters out and run them through cold water, drain the water and set aside. Heat oil in a pot, add a few pieces of rock sugar to melt, then pour in the drained pig's trotters and stir-fry the sugar color until it changes color, then remove from the pot. There happened to be no rock sugar, so I used white sugar.

  4. Pour a little oil into the pot, pour the ingredients in, add some salt and saute until fragrant.

  5. After the ingredients are fragrant, add the well-colored pig trotters and stir-fry evenly.

  6. After stir-frying evenly, pour in an appropriate amount of dark soy sauce, light soy sauce, cooking wine, and a small amount of salt. Continue to stir-fry evenly, then pour in boiling water to cover the pig's trotters. Bring to a boil over high heat, then turn to low heat and simmer for two hours.

  7. When the water has dried up to almost the same amount, you can stir-fry the pig's trotters a few times to better absorb the flavor. Finally, you can sprinkle some garlic leaves and stir-fry for a better color and more aroma.
