Rinse the fresh pork chops with water and put them into a drain basket to drain;

About 2-3 minutes, after flipping 4-5 times, the sub-rows will be about 70-80% brown;

Add dark soy sauce for about 5 seconds, pour in half a bowl of boiling water, cover the pot and let it boil vigorously for 2-3 minutes;

Add enough boiling water to cover the sub-rows, bring to a boil, reduce heat and simmer for 20-25 minutes;

It will take about 20-25 minutes. In the meantime, pay attention to the amount of soup so as not to burn the pot. When the time is almost up, lightly poke the meat with chopsticks to pierce it and prepare to collect the juice;

Add 7 tablespoons of soft white sugar and turn up the heat to reduce the juice. When the juice is reduced, shake the wok constantly to make the ingredients in the pot sway in circles to prevent the pan from being stuck;

Keep the fire high and shake the wok to collect the juice until the sub-rows become more and more red and bright with juice as shown in the picture. Add two tablespoons of vinegar and continue to shake the wok to collect the juice;

Collect the juice until it reaches the state as shown in the picture. Don’t make it too dry to prevent it from sticking to the pan;
