【Sichuan】Kiwi muffin
Overview
Kiwi fruit has high nutritional value, but I rarely buy it and eat it. The outer skin feels furry, and the taste of the pulp is not my favorite~~~ One time, in order to overcome my picky eating problem, I finally bought a kiwi fruit. It was still hard when I bought it, but as soon as I put it away, it became completely soft~~~ Now I am worried. Someone doesn’t like kiwi fruit as much as me, and I can’t eat so much by myself~~~ With the idea of eliminating kiwi fruit as soon as possible, I made a lot of food with kiwi fruit, and kiwi muffin is one of them~~~~

Ingredients
Steps
-
Weigh the low-gluten flour, baking powder, and baking soda into a container;
-
Peel and dice the kiwi fruit. It is recommended to cut the fruit before use to prevent loss of nutrients;
-
Prepare another container: mix eggs, milk, sugar, and corn oil;
-
Use a hand whisk to mix evenly, add kiwi fruit (you don’t have to put them all in, you can save some for later), and mix evenly again;
-
Sift the powder and pour into the liquid;
-
Use a spatula to stir evenly;
-
Pour the batter into the baking cup until it is eighty-full;
-
Put some kiwi fruit on the surface (you can also leave it out, the kiwi fruit will sink when baking);
-
After preheating the oven to 180 degrees, place the paper cup on the middle shelf and bake for 20 minutes;
-
After the baking time is over, take out the paper cup and let it cool before serving.
