  1. Peel white radish and carrot; set aside white vinegar, white sugar and wild pepper

  3. Mix white vinegar, white sugar and cool boiled water to make a sweet and sour sauce according to personal taste. Add 5 or 6 wild sansho peppers; the pickle juice should cover two-thirds of the radish;

  4. Pour the juice into the radish and marinate for 24 hours. It is best to seal it with plastic wrap and place it in the refrigerator. The only drawback of this kimchi is the radish flavor of white radish.
