Hand-rolled spinach noodles with oil
Overview
When I was young, my mother always made spinach noodles for us to eat. She would blanch the spinach until soft, squeeze out the water, and knead it directly into the flour. It took a long time to knead the spinach into a puree and blend it with the flour to become spinach noodles. Now that we have a food processor, we save a lot of effort. Come and try it today to see if it tastes the same as when you were a kid.

A handful of fresh spinach, cut into segments.

Pour water into the pot and bring to a boil, add a few drops of cooking oil, blanch the spinach in the water for 1-2 minutes and then remove.

Pour the blanched spinach into the cup of the food processor, pour a little water, and press the switch of the food processor. The spinach puree is ready when no spinach residue is visible on the wall of the cup.

For two people, use this cup of rice to measure flour, one cup for each person.

Mix the noodles with the beaten spinach juice. While pouring the spinach juice, use chopsticks or hands to stir the flour. I used chopsticks because I was afraid that the flour would stick to my hands😁. Stir until it resembles a pimple as shown in the picture and it can be kneaded into a ball.

Preliminarily knead the dough, put it in a basin and cover it with a damp cloth to let it rest for ten minutes.

My rolling pin is too small to roll out a large ball of dough at once, so I roll it into two parts. The dough is small and rolls out quickly. Take one part of the dough and prepare it for rolling, and keep the other part awake.

First, flatten the dough with the palm of your hand so that you can roll it with a rolling pin later.

Place the rolling pin as shown in the picture, roll the rolling pin once, turn the rolled part to the left, and continue rolling.

Repeat the previous step to roll out the dough. Repeat rolling a few more times until the dough is flat.

Turn the dough rolled out in the previous step over and sprinkle with flour to prevent it from sticking. Place the rolling pin as shown in the picture, and roll the dough close to you on the rolling pin.

Roll it up, roll it out. Put your hands on the dough roll and push it gently.

Unroll the rolled noodles again.

Continue to repeat this step, rolling the dough in circles, and finally roll it flat.

Finally the dough is rolled out.

Sprinkle with flour to prevent noodles from sticking together when cutting.

Dust the back with flour as well. Fold the dough in thirds to make it easier to cut.

Since there are less noodles today, just use a knife to cut them.

Pour water into the pot and bring to a boil, add the cut noodles. Wait until the noodles float and taste to be cooked before you can scoop them out. If you like something chewier, you can eat the noodles with fillings.

Pour oil into the pan and heat it up.

Put chopped green onion and dried chili noodles on top of the noodles. When the oil is hot, pour it on the chili noodles. When the oil is hot and poured on top, you will hear a sizzling sound and the aroma of the chili will come out. Eat the chili flavor when you make fried noodles.
