Polka dot cake slices
Overview
I made this cake piece with barley flour and made polka dots. I used three eggs and spread it in a thin layer on the baking pan. It looks like pieces of soft biscuits. It is very casual and delicious, and the children also like it very much.

Egg yolk protein separation. Add 10g of milk and sugar to the egg yolk.

Mix well and sift in the flour.

Stir well again.

Beat the egg whites until they are thick, add a few drops of lemon juice and 20g of sugar, and beat until a wet meringue is formed.

Take one-third of the meringue and put it into the egg yolk paste, mix evenly. Take a third of the meringue and cut it in half.

Pour the mixed egg yolk paste into the remaining meringue. Stir quickly to combine.

Take 2 tablespoons of the mixed egg batter and add a tablespoon of barley flour. Mix well. Place in a piping bag.

Pipe out wavy dots on a baking sheet lined with parchment paper. Bake in the oven for 4 minutes and take out.

Pour in the mixed egg batter and knock out big bubbles.

Put in the oven, 170 degrees, 20 minutes.
