Score a few cuts on both sides of the chicken wings to facilitate flavoring. Get a can of Coke ready.

Put the chicken wings in the water, pour a spoonful of cooking wine to remove the fishy smell, and blanch them for about 3 minutes. After taking out the chicken wings, rinse away the foam with tap water.

Heat oil in the bottom of the pan and fry the chicken wings until golden brown on both sides.

Then pour in the cola, add ginger slices and star anise, and add salt. Simmer over medium heat. When there is a small amount of soup left, use high heat to reduce the juice until oil seeps out. Take it out of the pot.

At the end, when the juice is reduced over high heat, stir-fry a few times quickly to avoid burning the pot and to add color.
