Prepare ingredients: 250g toon, 4 eggs, half a spoon of starch, and half a spoon of salt.

Cut off a little bit of the toon head. If it is particularly fresh, don’t cut it.

Add water to the pot and bring to a boil, turn off the heat; grab the toon.

Put the head in the water for a while, and it will change color immediately.

Look, the roots turn green; then put the whole handful into the water.

It's no longer hot. Squeeze the water, cut into fine pieces, add half a spoonful of starch, and mix well. This step is mainly to preserve the moisture of the toon.
