Sweet and Sour Pork Ribs
Overview
Sweet and sour spareribs is a very common dish, and its preparation is quite common. Today, my method is a little different. I abandon the traditional sweet and sour and use tomato sauce for seasoning. The sweet and sour taste is more classic than the traditional method.

After blanching the ribs, chop into small pieces. Cut the green onions into sections, and break the rock sugar slightly with the back of a knife.

After the wok is heated over high heat, turn to low heat, add vegetable oil, add rock sugar, and stir-fry over low heat until the sugar turns brown.

Fry until the color becomes darker and there are small bubbles.

Add the green onions and stir-fry until fragrant.

Add the pork ribs and stir-fry until evenly colored.

Add cold water, add salt, bring the water to a boil, then turn to low heat and simmer for about an hour.

Stew until the ribs are soft and tender, then turn to high heat to reduce the soup.
