A handful of dried fungus, soaked in cold water.

Pick the garlic sprouts, wash them and cut them into sections.

Beat the eggs, mix well and add salt until it has a light salty taste.

Boil water in a pot. After the water boils, blanch the garlic sprouts for 1-2 minutes, remove and dry and set aside.

After the water boils again, add the fungus and blanch it for 2-3 minutes, take it out and let it cool for a while before tearing it into small florets.

Heat the oil in the pot, fry the eggs until 8 are cooked, set aside.

Reheat the pan, heat the oil, add the garlic sprouts and stir-fry over high heat.

Stir-fry until the skin of the garlic sprouts becomes like tiger skin, be careful not to burn it.

Add the fungus over medium heat and stir-fry, add soy sauce.
