Red bean rice cake
Overview
When you see the grains of glutinous rice with your own eyes, after being steamed and stirred in the bread machine, they turn into glutinous rice cakes. It has the texture of glutinous rice and the softness of cakes, and then sandwiched with the thick and sweet red bean filling you made, it really looks like the thousand-feuille cakes that you often bought on the street when you were a kid. But making it yourself is more hygienic and the red bean filling is thicker. This is my first time making it, and I don’t have a mold, so the rice cake is not easy to flatten, but I already like the texture, and my parents both say it’s delicious. Sticky and glutinous, smooth and sweet, coupled with the sweetness of white sugar and the slight fragrance of sesame, a piece of my favorite red bean rice cake paired with delicious milk tea, reliving "Where Are We Going, Dad" is really a cute, sweet and warm time~~ Note: I use a Petri bread machine, model PE8500. In addition to making various kinds of bread, you can also use leftover rice to make bread. You can also make rice cakes, rice wine, jam, eight-treasure porridge, etc. It also has separate functions for kneading, fermenting, baking, thawing... very easy to use~~

Wash the red adzuki beans, add appropriate amount of water, and soak for about 10 hours.

Wash the glutinous rice and soak it for about 45 minutes.

Put the soaked red adzuki beans into a pressure cooker and add enough water to cover the beans by about 1 knuckle.

Cover the pot, close the buzzer, bring to a boil over high heat, then turn to medium heat after the valve buzzes, cook for about 15 minutes, turn off the heat and let stand for 10 minutes.

Open the lid of the pot, add sugar, stir-fry over medium heat and use a spatula.

Stir-fry until the water reduces, then turn down the heat and stir-fry until the bean filling becomes thick. Turn off the heat, scoop out the bean paste, and let cool until set aside.

Drain the water from the soaked glutinous rice and put it into a bread machine with 450 ml of water.

Close the lid, select the rice cake button, and start. After the mixing stick starts stirring, open the lid, add an appropriate amount of sugar, and use a rice spatula to flip it from bottom to top several times to make the rice cake stir evenly. Close the lid again and wait until the program ends.

Apply a little oil to the box, scoop out one-third of the rice cake and put it into the box. Make a fist with your right hand, dip a little oil into the back of your finger, and press the rice cake to make it flat. Scoop another half of the bean filling, spread it evenly over the rice cake, and press it flat.

Then add rice cakes, bean paste, and rice cakes in sequence, and press them flat. Close the lid and let cool in a cool place.

Turn the box upside down and take out the rice cake.

Dip a knife into water and cut the rice cake into pieces. You can sprinkle it with sugar, sesame seeds or honey, preserved fruits, etc. according to your personal taste.
