Cordyceps, winter melon and pork ribs soup

The weather has gradually become colder after the National Day. We have all finished eating, and the soup in the pot is still hot. Kunbo casserole has good heat retention. It is great to make soup and serve it directly on cold days

The newly purchased Kunbo casserole has a large capacity of 4.6 liters, which can accommodate 2 pounds of pork ribs and 2 pounds of winter melon at one time, which is enough for a family of four.

Peel the winter melon, wash and cut into pieces. Set aside.

Chop the pork ribs into sections, soak in the bleeding water, drain and set aside.

Prepare the ingredients including cordyceps sinensis, star anise, onion knots, ginger slices, and Sichuan peppercorns.

Put the ribs into the Kunbo casserole and add the ingredients.

Pour in appropriate amount of water.

Place on the gas stove and bring to a boil over high heat, then turn to medium to low heat and simmer for 30 minutes.

Add the winter melon cubes.

Turn to low heat and continue simmering for 20 minutes, then add appropriate amount of salt to taste.
