Baked sugar triangle
Overview
I always like to make the dough naturally. I make the dough on the first night and combine it with baking soda the next morning. Steam a big pot of steamed buns that are sweet and fragrant. This time I steamed sugar triangles. I remember it was not easy to eat steamed buns when I was a child. Eating sugar triangles was really something I longed for. Only during the Chinese New Year can I satisfy my craving. Therefore, the sugar triangles are deeply embedded in my memory and will never disappear. I still have a soft spot for them now!

Steps
-
On the first night, add an appropriate amount of water to the flour and mix it into a dough. Let it ferment naturally (it will be better if you have a starter, which will ferment faster). Take out the fermented dough and knead it evenly
-
Dissolve 3g of baking soda mixed with a little warm water, and knead it into the dough little by little. If the dough sticks to the board, add a little flour and knead it evenly. It will not smell sour, but has a slight sweetness. It is better to cut the dough so that it does not stick to each other, and then let it sit for 5-10 minutes
-
Mix white sugar with a little flour and mix well. The sugar liquid will not flow out when steamed in this way, and it will not burn your mouth when eaten hot
-
Divide the dough evenly into several portions, roll one portion into a cake, cover with powdered sugar, and shape into a triangle
-
Add appropriate amount of water to the steamer and steam for 20 minutes
