  1. Wash the ribs and chop them into small pieces, soak them in cold water for about 10 minutes to remove the blood and fishy smell. Drain off the water, add appropriate amount of salt, cooking wine, light soy sauce, and pepper and marinate for about 20 minutes to absorb the flavor.

  2. We use the marinating time to make the paste. Take a small bowl and put in an appropriate amount of tapioca corn starch, flour, eggs, and peanut oil. Pour in water and mix well. You can control the consistency by yourself and adjust it until you are satisfied.

  3. Take a clean container for plating, cut two lemon slices, and place two coriander leaves on one end of the plate. Squeeze the juice from the remaining lemon, mix it with white vinegar and sugar and set aside.

  4. Heat the pot and pour in peanut oil. Heat to 560% heat. Wrap the marinated ribs in batter and fry them in the oil pan until golden brown. Keep turning during the process to avoid burning the bottom. Fry over medium heat for about 3 minutes and they will be cooked. Remove and then re-fry. During re-frying, heat the oil to 78% hot. The oil surface will still emit green smoke. Pour in the ribs for 10 seconds, then remove and place on a plate.

  5. In the last step, pour out the oil and reserve the base oil. Add the minced onion and garlic and saute until fragrant. Add tomato paste, water and the prepared lemon sweet and sour sauce. After heating, thicken the gravy and pour it over the fried pork ribs. The sweet, sour and crispy pork ribs are ready✌
