Steps
-
After the butter is softened, put it into a basin and mix it evenly with a hand mixer; add fine sugar and continue to mix it evenly in one direction with a hand mixer until the color turns slightly white
-
Add the egg liquid in two batches and beat in one direction until it is completely absorbed each time before adding the next one
-
Sift in low-gluten flour and use a rubber spatula to fold from bottom to top to form a flour-free dough;
-
Divide the mixed dough into two equal parts, first take one part and knead it into a long and thin strip on the chopping board;
-
Then use a rolling pin to roll it out into a rectangular shape, take some lotus paste filling, and roll it into thin strips as well, the length should be consistent with the length of the dough sheet
-
Then put the lotus paste strips on the dough sheet, roll up from one end, and wrap the lotus paste strips
-
Knead it repeatedly on the chopping board several times to make the package tighter, and then cut it into small pieces evenly with a knife;
-
Place the cut pieces on a baking sheet lined with tin foil, and use a small brush to brush a layer of egg yolk liquid on the surface;
-
Then sprinkle some black sesame seeds or white sesame seeds on the surface brushed with egg yolk liquid; preheat the oven to 180 degrees, turn the heat up and down, place it in the middle layer of the oven, and bake for about 20-25 minutes, until the surface is golden.
