Bagels with egg yolk and meat floss
Overview
I have a habit that every once in a while I will go through the refrigerator to find some things that have been stored in the refrigerator for a long time, clean and organize the refrigerator, and then use the things I find to see if I can use them to make something delicious. No! I dug out a few egg yolks and a small box of meat floss, and made a few egg yolk and meat floss bagels. The finished product was very soft and the filling was very fragrant. I ate two of them in seconds as soon as they came out of the oven without waiting to cool down. If you like egg yolk food, check this out!

Mix the other dough ingredients except butter together and knead it into a smooth dough (the brand of flour I use is; "High-gluten Whole Wheat Bread Flour", which is available in all major supermarkets. I am a bit like advertising!);

Add butter and knead until fully expanded, preferably to form a glove film;

Take out the dough, weigh it and divide it into 6 equal parts, cover it with plastic wrap and let it rest for 10 minutes;;

Make the filling while the dough is loose; mix the salted egg yolk and pork floss together and mix well (I added a little salad dressing to make the filling slightly softer);

Take a small piece of dough and roll it into a long tongue shape;

Spread the filling;

Wrap in fillings, roll into strips, pinch and seal tightly (be sure to pinch and seal tightly);

Roll into a long strip and flatten one end;

Wrap the other end into the cinch and pinch (again; be sure to pinch the cuff);

Place on oil paper, complete 6 pieces in sequence, cover with plastic wrap, and ferment for 20 minutes in summer and 30 minutes in winter;

Put water and fine sugar in a pot and bring to a boil over medium heat until the water is bubbling. Turn to low heat (preheat the oven to 200 degrees at this time). Lift up the oil paper and put the bagels with the oil paper facing up into the sugar water. Remove the oil paper and cook for 30 seconds. Turn over and cook for another 30 seconds (if you want the finished product to have a tough outer skin, cook both sides for one minute). Remove and drain the water;

Arrange it into a baking pan and place it in the middle rack of the oven at 200 degrees for 18 minutes;
