Wash the ribs and chop into small pieces.

Slice the ginger, smash the garlic, chop the rice pepper, wash the star anise and set aside.

Peel and wash potatoes, cut into small pieces and set aside.

Add an appropriate amount of water to the wok, add ginger slices, add pork ribs, add cooking wine and boil for about 1 minute. Take the cooked ribs out and cool them down, then drain the water.

Heat oil in a pan and sauté ginger, garlic, rice pepper and star anise until fragrant.

Add the pork ribs and stir-fry, add salt and light soy sauce.

Add appropriate amount of water, bring to boil and simmer for fifteen minutes.

Add the potatoes and continue to simmer for a few minutes to reduce the juice.
