Thousands of silk-drawn shrimps
Overview
Silk threads of sugar bring out my love for food and enthusiasm for baking; silk threads bring out my yearning for a better life, that carefree pursuit... Sugar painting is China's intangible cultural heritage, a gradually lost folk handicraft, and it exists in many people's childhood! Sugar painting is difficult, drawing is difficult, but I believe there is nothing that can't be done, only people who can't do it! I like who I am now, and I will definitely do what I choose. Finally, it is no longer a three-minute passion, and I no longer give up halfway! I struggled to learn this sugar painting. After practicing for two days and three days, I was finally able to master it a little bit. However, this person who has no art skills can only draw randomly! Of course, this sugar painting is not today’s theme, but it is also an important supporting role today. Today’s theme is: shrimp!

Ingredients
Steps
-
Sugar painting materials: 70 grams of white sugar, 20 grams of maltose, appropriate amount of water. Auxiliary tools: food thermometer, spoon, heat-resistant silicone pad. Mix the white sugar, maltose and water. Bring to a boil over high heat, then cook over medium to low heat until it reaches 160 degrees.
-
Use a spoon to stir continuously during this period to avoid sticking the pot. When the temperature reaches 160 degrees, there will be resistance to stirring with the spoon, and the sugar will turn slightly yellow. Turn off the heat at this time,
-
Spoon out the syrup and draw your favorite pattern on the silicone pad! If you want the shape to be curved, slightly curl the mat while it's hot, then unmold after the syrup has cooled! It is best to apply a layer of oil on the silicone mat first, then remove the sugar painting from the mold and refrigerate it for later use.
-
Ingredients for shredded shrimp: 200 grams of fresh shrimp, about 60 grams of white sugar, appropriate amount of starch,
-
Season with salt and pepper. Open the back of the shrimp, remove the shrimp lines and clean them.
-
Then marinate with a little salt and pepper for 5 minutes to add flavor and remove the fishy smell,
-
Then coat the shrimp with a layer of starch;
-
Heat oil in a wide pan. When the oil is about 50% hot, add the starch-coated shrimp
-
Fry the shrimp until golden brown and take them out,
-
Continue to heat the oil until it is 70% hot, pour it in and fry again for a few seconds, then pour out and drain;
-
Add a little water and a little salt to the sugar, put it in a pot and cook over low heat until the sugar dissolves and becomes thick,
-
During this period, keep stirring the syrup with a spoon. You can use a spoon from time to time to pick up the syrup when it is low to see if there are any sugar shreds. Once there are sugar shreds, immediately pour in the fried shrimp and stir quickly.
-
Before serving, add a little white vinegar and mix quickly before serving! Home-cooked food is now ready to eat!
-
In the last step of making sugar strands, you can cool the syrup made in the same way as step 1 for a while, use chopsticks to pick up the syrup and wrap the sugar strands around the shrimp,
-
You can use two chopsticks to stick it together and then separate it to pull out the sugar strands! Take out the sugar painting, put the shrimp on a plate, wrap it with sugar thread, and the finished product is ready!
