Overview
This is a small and refreshing cake roll. I fell in love with it when I first saw it. The moment we open our eyes in the morning, what we most want to see is the blue sky and white clouds. However, due to human-made environmental pollution, blue skies and white clouds are rare. It is the wish of all of us to protect the environment starting from you and me, and to give children a blue sky. Separate the egg whites and egg yolks, put the egg whites into a clean container that is water-free and oil-free and set aside for later use

Put four egg yolks into a clean container

Add 60 grams of milk to the egg yolks and mix well, 20 grams of sugar and mix well, 60 grams of corn oil and mix well, finally sift in 70 grams of low-gluten flour

Use the technique of making vertical lines or the letter Z to mix the egg batter. Be sure not to stir in circles to avoid gluten

Take two tablespoons of egg yolk paste and put it into a clean container

Add 3-4 drops of sky blue coloring to the remaining egg yolk paste

While stirring, pay attention to the color. Be sure to add small amounts and multiple times until you are satisfied. Set aside for later use

Add a few drops of lemon juice or white vinegar to the egg whites, beat with an electric mixer until foamy, add 25 grams of sugar, continue beating until thick (about 2 minutes), add the remaining sugar

After about 4-5 minutes, lift the whisk and the egg whites will have big hooks

Take two spoons of egg white and put into two spoons of egg yolk paste and mix well

Fold into a fine cake batter

Line the baking sheet with parchment paper in advance, cut a small opening in the piping bag and put in the cake batter

Preheat the oven to 170 degrees, draw an irregular cloud shape on the baking sheet, bake in the preheated oven for 2 minutes and take out

Mix the remaining egg white batter and egg yolk batter in the piping bag, stir well, pour into the baking pan to knock out air bubbles, and use a scraper to smooth the surface

Place the oven in the middle rack of the preheated oven at 160 degrees and bake for about 20 minutes. Pat the surface with your hands until there is no rustling sound and it’s ready to go. After it’s out of the oven, invert it onto a baking rack lined with oil paper

Tear off the greased paper while it's hot and let it cool to the temperature of your palms
