Wash the kidney beans and remove the old tendons at both ends.

Shred the kidney beans diagonally, beat the eggs with salt, shred the carrots, and chop the garlic into large pieces.

Heat oil in a hot pan, fry eggs over low heat until medium-cooked, set aside.
