Braised chicken wings
Overview
Braised chicken wings are my son's favorite. The chicken wings should be marinated one night in advance to add flavor. When braised, brown sugar is used to stir-fry the chicken wings to a bright red color without being greasy. Very delicious.

Prick the chicken wings with a toothpick and cut them into several cuts. Add salt, cooking wine, and pepper, rub them in, and put them in the refrigerator to marinate overnight.

Pour a little oil into the wok, add the marinated chicken wings and fry until brown and oil comes out.

Cook in cooking wine to remove the fishy smell, add brown sugar, a little dark soy sauce, green onions, and ginger, stir-fry until coloured.

Pour in a little hot water and simmer for 15 minutes.
