Coconut health cake
Overview
This is a pastry made with an antique Joyoung soymilk machine. Ever since I bought a Joyoung soymilk machine in 1997, I have fallen in love with it. This is the third machine I bought, and it is also the first generation product of Joyoung. It has been used for a long time and has not been retired yet. The soymilk machine most often makes whole grains. This time I changed the method and made a health cake. The response was pretty good and it is suitable for all ages.

Soak the black rice and peanuts, remove the cores of the red dates and set aside

Pour the black rice, peanuts, and red dates into the soymilk machine, add an appropriate amount of water, and start grinding

Take 3/4 of the ground rice milk, add corn starch and stir to dissolve

Prepare an appropriate amount of corn flour

Add appropriate amount of sugar to the remaining 1/4, heat in a pot over low heat

Pour the cornstarch slurry into the sugar slurry, stir continuously, and cook until it becomes sticky

Prepare the mold

Pour into a container, cool and refrigerate overnight until solidified

Cut into small pieces with a knife, wrap in coconut and serve on a plate
