Wash and dry the cod, cut it into thumb-sized pieces, add cooking wine and salt, mix well to remove the fishy smell, and leave it for half an hour.

Add raw chili powder, sugar, vinegar, light soy sauce and starch in turn and mix well, then add a little water and mix well and chop ginger, onion and garlic finely and set aside.

Add the marinated fish to the water starch and mix well. (The water starch can form a line when you grab it.) Be careful not to use too much, just apply a thin layer. For fried cod fillets, use a little more oil and use low to medium heat. After setting, take them out and let them cool for a while, then put them in the oil pan and fry them again. Cook for a minute or two, leaving a little oil in the pan.

Use low heat, then add ginger, onion and garlic to the pot, stir-fry immediately after fragrant, add the fried cod pieces and stir-fry evenly. Pour in the prepared sauce, stir-fry quickly over high heat to reduce the juice and put in the pot. Sprinkle with chopped green onion or coriander.
