Grilled Eggplant with Garlic Minced Pork
Overview
I have never been able to cook eggplant. As long as it is fried or stewed, my family does not like to eat it. Only eggplant roasted with minced meat is always welcome and there is less oil smoke.

Ingredients to prepare: wash the eggplant, wash and cut the pepper into small cubes, mince the garlic, mince the green onion

Cut the eggplants in half, score the surface with a knife, and place them on the baking sheet. One of the eggplants is too long and cut into two halves

Brush the cut surface of the eggplant with a little vegetable oil

The oven adopts a pure baking method. The upper and lower tubes are heated to 200 degrees. After the temperature rises, place the baking sheet into the oven. Bake the eggplant for 16 minutes first

While the eggplant is roasting, prepare other ingredients; first prepare the sauce: garlic chili sauce, Korean chili sauce, tomato sauce, and sugar, put them into a seasoning bowl; stir with a little water to form a paste

Put an appropriate amount of vegetable oil in the wok. When the oil is hot, add minced garlic and green onion and stir-fry until fragrant. Add the meat filling and stir-fry until it changes color. Pour in a little cooking wine and stir-fry evenly
