I eat cold dishes more often in summer. Braised food is one of my favorites. I usually buy some from braised food shops when I don’t have time to eat it.   1. First, remove the fat and fascia from the beef tendon, wash it clean, and prepare the main ingredients. A little onion, ginger, garlic, and a portion of all the marinated ingredients (where can I find the seasonings) and a secret marinated sauce.

  2. Pour cold water into a pot. After the water boils, blanch the beef tendons and blanch the bleeding water. Rinse and set aside.

  3. Heat a little oil in the bottom of the pot, add soybean paste, green onions and ginger and stir-fry until fragrant, add about 1000CC and bring to a boil.

Then, pour all the ingredients and the blanched beef tendon into the pressure cooker (it is better to use a casserole if time allows), add two tablespoons of cooking wine and one tablespoon of salt. There must be enough seasoning, otherwise the taste will be too bland and it will not taste good. If you have a light taste, you can brine it more lightly and adjust the sauce when eating.

  5. The beef tendon will be marinated in about 1 hour in the pressure cooker and 2 hours in the casserole. The stewed soup can be placed in a crisper and placed in the refrigerator. You can continue to use it as the old stewed soup next time, because the aniseed ingredients simply release the flavor. If you use it next time, all the flavor of the aniseed ingredients will be released!

  8. If you want a stronger sauce, you can soak the beef tendon in marinade overnight, take it out and let it cool before eating. It will be more delicious. Be sure to cool it thoroughly before cutting, otherwise the cut surface will not be smooth and beautiful~
