Crispy Fried Cucumber
Overview
My mother-in-law bought a lot of fruit cucumbers on the weekend and packed a few before going home. After washing and chewing them at home, they were still a bit cold, so she simply fried them and ate them. The fried cucumbers are crispy and raw, and freshly ground black pepper is added. It tastes great. If it weren't for the two guys in the family who don't eat meat, it would be even better if they added some pork belly.

Wash the fruit cucumber and set aside.

Cut into thin slices.

Add salt (a small spoon), mix well and marinate for a while.

Pickle out the water.

Add water to wash away the salt. You can taste it to your liking. (It doesn’t matter if it’s too bland. You can add more salt when frying. On the contrary, if it’s too salty, just wash it a few times)

Take it out and squeeze out the water.

Put a small amount of oil in the pot, add green onion and stir-fry until fragrant.

Add cucumber and saute until fragrant.

Add freshly ground black pepper for a better taste.

Add a little chicken essence to season and serve.
