Purple Cabbage and Lotus Leaf Pizza (Chicken Burrito/Bacon Burrito)
Overview
Purple cabbage and lotus leaf pancakes are suitable for rolling all kinds of vegetables and meats, and are a good breakfast choice. The first time I saw lotus leaf pancakes, I was attracted by it. I happened to be making purple cabbage siomai. I had leftover dough, so I tried to make lotus leaf pancakes! Not bad, I steamed the remaining 16 pie crusts and put them in the refrigerator to quickly freeze. They can be used three times.

Steps
-
To make the purple cabbage dough, see Purple Cabbage Siomai. This time to make the pancakes, I used the leftover dough from the Siomai and cut it into appropriate sizes.
-
Take a small piece of dough and roll it into a thin crust. The thinner the better, the more translucent it will be!
-
The rolled skin is steamed in a pot.
-
Continue to roll out the second small piece of dough and stack it directly on top of the previous steamed piece (because the first piece is already cooked, it will not stick.) Repeat this until everything is done.
-
All steamed and cooked.
-
Spread out piece by piece to cool.
-
As transparent as a mask!
-
Separate it into three parts with plastic wrap, put it in a box and freeze it, then steam it when you want to eat it.
-
I took it out and steamed it the next day, and it was the same!
-
Stir-fry the chicken in the sauce, stir-fry the carrots, and shred the cucumber.
-
Take one sheet and add appropriate amount of cucumber, carrot and chicken.
-
It's a little translucent and you can see the stuff rolled inside.
-
Isn't it a bit like KFC's chicken wrap?
-
Great as a breakfast staple!
-
The main breakfast for the second time: fried bacon, fried potatoes and carrot shreds
-
Bacon, carrot and potato burritos!
-
Another breakfast staple.
