Original cake roll
Overview
An original but delicious and fluffy cake roll. There is no cream, so it only takes 2-3 minutes to set. No need to refrigerate. It is quick and delicious. It is suitable for takeout or breakfast. (The baking pan is 28cm*28cm)

Separate the egg yolk and protein. After mixing the egg yolk, corn oil and milk, stir the egg yolk irregularly. The speed does not need to be too fast. It will be in an emulsified state after about 4-5 minutes. The emulsified state does not mean beating the egg yolk. You do not need to emulsify, but the cake tastes better after emulsification.

Sift in the flour and mix evenly with a whisk in a Z-shape. (You can sift this step to remove some unevenly mixed flour chunks.)

Add a few drops of lemon juice to the egg whites and make a rough foam.

Add sugar one at a time or in three batches and beat until wet to dry foam. Preheat the oven to about 180 degrees

Add 1/3 of the egg whites to the egg yolk batter, turn the plate with one hand, and mix evenly in a J-shape with the other hand.

Pour into the remaining 2/3 of the egg whites and mix evenly.

Pour into a baking pan lined with non-stick oil cloth and smooth the surface with a spatula.

The middle rack of the oven is 160 degrees for about 25 minutes. The temperature and time should be adjusted according to your own oven. You can touch it with your hands in the next few minutes. The skin will feel a little hard but it will not break if you press it lightly. (My color is a little darker in the middle)

After taking it out of the oven, move it with the oilcloth to the grill, tear off the four sides of the oilcloth and let it cool. (At this time, you can cut off both sides diagonally outward)

After it's warm, cover it with a piece of oil paper (I used a softer oil cloth), turn it over, and remove the original oil cloth underneath.

You can press it a little at the beginning.

Roll up tightly with the help of a rolling pin.

After the whole roll is done, set it for 2-3 minutes.
