Christmas Wreath Cake Last Christmas, I had the courage to celebrate my birthday. For the first time in my life, I made a naked Santa Claus cake. It was very simple, no need for a piping tip, just use a spatula to spread the cream, and decorate it with strawberries to make it look like Santa Claus. Christmas is coming soon this year, so I used a chimney mold to bake a yogurt chiffon cake and decorate it to make a Christmas wreath cake. I’m not good at decorating, but luckily I can feed it to my children, so I need more practice!

Get the ingredients ready.

(Using the post-egg method) Put the corn oil and yogurt into a container and stir until emulsified.

Sift in the cake flour and mix well with a hand mixer.

Add 5 egg yolks.

Stir until it becomes a smooth batter, set aside.

Beat the egg whites at slow speed until they form thick peaks and add one-third of the sugar.

Beat the egg whites at medium speed until smooth, then add one-third of the sugar.

Continue to beat at medium speed, adding the last portion of sugar when texture appears.

Finally beat until wet to dry and almost hard.

Add one-third of the egg whites to the egg yolk paste and mix evenly without making circles.

Pour the mixed cake batter into the remaining egg whites.

Stir evenly, remember to stir thoroughly from the bottom to avoid egg yolk paste remaining on the bottom of the basin.

Then pour it into the mold, tap twice to shake out the big bubbles in the cake batter, and preheat the oven to 160 degrees for 10 minutes in advance.

Place the cake in the bottom layer, put the cake mold into the baking pan and bake for 60 minutes. After baking, take out the cake base and shake it twice on the table, then immediately invert it to cool.

When the cake is cool, unmold it and divide it into two pieces. (Wash all kinds of fruits in advance to control the moisture)

Add 30g of whipping cream to 30g of sugar and beat until ready for decoration.

Place a piece of cake on a plate, put the whipped cream into a disposable piping bag, put a chrysanthemum nozzle on it, pipe a circle of cream on the cake piece, and add the fruit.

Pour in another round of whipped cream.

Put the last piece of whipped cream, and pipe a circle of whipped cream (the pattern is up to you).

Just put roses, jasmine leaves, strawberry Santa decorations on it.
