  1. Wash the spinach, drain the water, cut it into small pieces, put it into a grinder, pour an appropriate amount of water, and beat into juice. Filter it with gauze and reserve the juice for later use.

  2. Put the flour into a deep basin, add the eggs, then add an appropriate amount of spinach juice and stir to form a fluffy consistency, then knead repeatedly to form a ball. The dough must be harder, the more you knead the noodles, the stronger they will be! I forgot to take a photo, this is made with purple cabbage juice, so it's a bit lavender.

  3. Divide the dough into small pieces, press into sheets, and sprinkle dry flour on both sides of the dough to prevent sticking. Put it into the noodle machine and press the dough several times

  4. Place the dough sheet on the knife edge and cut into strips.

  5. Boil the noodles in boiling water, add cold water three times until the noodles are cooked, add poached eggs, it is really delicious.
