No-Bake Cherry Jam Cheesecake
Overview
I made this no-bake cheesecake with cherry jam and fresh cherries. It’s so refreshing to eat a piece of it on a hot summer day. Making this no-bake cheese requires three main steps: making the cake base, making the cheesecake, and making the mirror surface.

First make the cake base: put the digestive biscuits into a plastic bag

Use a rolling pin to crush

Melt butter over water

Crush digestive biscuits into a bowl

Mix well

The 6-inch removable bottom cake mold is ready. Place a layer of parchment paper on the bottom. Pour in the butter and digestive biscuits, press it flat and firm, and set aside

Next, make the cheese paste: Soak the gelatine slices in cold water until soft

Pour off excess water, melt with insulated water, and then keep it in hot water to prevent solidification

Take out the cream cheese in advance and soften it

Melt with hot water and beat until thick and smooth without large particles

Add light cream and sugar into a bowl

Beat until 60% or 70% hair

Add the whipped cream to the cream cheese and mix well

Cherry jam is ready

Pour the cherry jam and melted gelatin solution into the cream cheese batter

Mix well

Pour into the lined cake mold, cover with plastic wrap, and refrigerate until the cream cheese liquid solidifies

Next, make the mirror surface: Soak the gelatine sheets in cold water until soft, then pour out the excess water, melt in running water, and set aside

Put cherry jam and cold water into a bowl and mix well

Pour the melted gelatine solution into the cherry jam liquid and stir evenly

Take out the frozen and solidified cheesecake and use a sieve to filter out the solids in the cherry jam liquid

Cover with plastic wrap and refrigerate until the mirror surface solidifies. When demoulding, you can use a hot towel to apply heat to the mold for two minutes, and you can easily demould
