Matcha Pound Cake
Overview
I continued to try out Xuechu's new molds and made a pound cake with Japanese Wakatake matcha powder. The color is really beautiful! The feeling of spring!

Butter cut into small pieces and softened at room temperature

Add granulated sugar and mix evenly with a spatula. I used soft white sugar

Use a whisk to beat at high speed for about 5 minutes. If the room temperature is low, you can add warm water

Add the egg liquid in four batches, beating after each addition until combined, then add the next one

This is after adding all the egg liquid and beating evenly

Mix cake flour, matcha powder and baking powder

Sift the mixed powder into the butter egg batter

Use a spatula to stir evenly, about 90 times until the batter becomes shiny

Pour the batter into the mold and smooth it out. It is best to have the four corners higher and the middle lower

Place in the preheated oven and bake at 180 degrees for 45 minutes

While baking, heat water, sugar and matcha powder together and stir into syrup
-
After the cake comes out of the oven, brush it with syrup while it's still hot. After removing it from the mold, brush all over the cake

After cooling, wrap it in plastic wrap and refrigerate overnight for better taste
