Tomato grilled sausage and scrambled eggs
Overview
The temperature has dropped, but it’s still raining outside. I really don’t want to buy groceries, so I search for things in the refrigerator and cook something casually. Although this dish is simple, it also has meat, eggs and vegetables.

Cut the tomatoes into cubes, slice the sausage, and break the eggs into a bowl and set aside.

Pour some more vegetable oil into the pot and turn on medium heat.

When the oil is 90% hot, pour in the beaten egg liquid.

Use chopsticks to break up the eggs and scoop them out.

Leave remaining oil in the pot and add some chopped green onion.

Stir-fry until the aroma comes out, add the sausage slices, and stir-fry until the sausage slices become rolled.

Pour in the tomatoes and stir-fry to release the red oil.

Add salt, sugar, vinegar and stir-fry evenly.

Pour in the eggs and heat slightly.

Serve the casserole directly and eat it warm.
