"Cherry" cod

Overview

Cherry meat is a very famous dish. The meat is cut into small pieces, battered and fried, then covered with red tomato sauce. It looks like a cherry and is sweet and sour. Inspired by it, I made cherry cod, which is more tender.

  1. Thaw the cod naturally, do not soak it in water.

  2. Wash and peel off the fish skin.

  3. Remove the bones from the fish and cut into 1cm square pieces.

  4. Add 1/3 egg white and mix well.

  5. Add half a teaspoon of salt (the small spoon from the spice box)

  6. Add half a teaspoon of peppercorns and mix well.

  7. Add potato starch and mix into a thick paste, just enough that the juice will not fall down when lifted.

  8. Mix juice, four tablespoons of rice vinegar, three tablespoons of sugar

  9. Add tomato paste.

  10. Add a total of four tablespoons of tomato paste and two tablespoons of water, mix well, and taste. In fact, if you like it sweet, add more sugar, if you like it sour, add more vinegar. There is no fixed formula.

  11. Heat half a pot of oil and add fish pieces one by one.

  12. Fry until the starch shell feels a little hard and it must be cooked. Take it out and control the oil.

  13. Pour out the oil, leaving some base oil, add the mixed tomato sauce, and slowly simmer until thick.

  14. Coat them all with sauce and serve.
