Orange mirror cake
Overview
I made a cake for my niece’s birthday. I felt a little disappointed that I had to give the cake to my son. I thought of using more chiffon cake scraps to make a mousse cake. I happened to buy a six-inch mold and used the scraps to make a mirror mousse cake. Because it was made with scraps, the cut cake did not look so neat.

Prepare the main ingredients

Soak the isinglass slices in 40 grams of fruit juice. After soaking until soft, place the isinglass slices in a pot over water and melt

Add 25 grams of sugar to 110 grams of whipping cream and whip until slightly textured. The whipped cream is blended with the isinglass to form a mousse

Add appropriate amount of chiffon cake scraps

Pour half of the mousse filling, and continue to add an appropriate amount of cake scraps

Pour in remaining mousse filling. Cover with plastic wrap and place in the refrigerator for 4 hours

Now start to make the mirror surface. Put QQ sugar into 30 grams of cold boiling water, put it in a pot and melt it

Let the Q sugar liquid cool down and gently pour it on top of the mousse cake, then cover it with plastic wrap and refrigerate it in the refrigerator for more than 1 hour until the QQ liquid is completely solidified
