Mix ground beef and eggs in a bowl. (You can beat the eggs a little ahead of time, or just crack them in a bowl.) Use your hands or a spatula to mix until the eggs are fully incorporated.

Use a scale to divide the beef into 200g portions.

To shape the pie, we can press the beef into 4 portions (105mm) in a ring mold. If you are not using a ring mold, when shaping the pie, first shape it into a ball to remove air and cracks. Next, use the flat palm of your hand to flatten the sphere and use your thumbs to shape the edges.

Season the patties with salt and pepper before cooking. Transfer to a gallon-sized ziploc bag. We packed two steaks per bag to avoid overstuffing.

Depending on the thickness of your pie, the cooking time will vary from 15 minutes (for a 0.5-inch/1.3-cm-thick pie) to 30 minutes (for a 1-inch/2.5-cm-thick pie). You can leave them in the water for an hour and they will be perfect no matter what.

Let the steak cool to room temperature while you prepare your condiment tray. This step will help maintain the shape of the steak while grilling.

Transfer patties to hot grill and grill for 45 seconds. Flip, add cheese if you like, and grill for another 30 seconds. Once spread, grill for an additional 15 seconds to melt the cheese.
