Scallion Bacon Cake

Prepare bacon and chopped green onions. Fry the bacon first and coat the chopped green onions with flour. Beat the egg yolks and egg whites in two clean bowls that are free of water and oil. Put the egg whites in the refrigerator for later use.

Beat the milk and corn oil evenly and emulsify well.

Sift the previously sifted flour into the bowl again.

Use an egg beater to make a Z-shape and mix the flour until there is no dry powder. Add an egg yolk.

After mixing, add the second egg yolk. This is the mixed egg yolk paste state.

Add a few drops of lemon juice to the egg whites, add sugar in two batches, and beat until dry peaks form.

Take one-third of the beaten egg white and add it to the egg yolk paste. Use a spatula to stir evenly from bottom to top. Do not stir in circles.

Pour the mixed cake batter back into the remaining egg whites.

Mix the cake batter in the same way.

Add the prepared green onions and bacon to the cake batter.

Stir a few times and pour into a 4-inch removable bottom cake mold and paper cup. Shake twice to release air bubbles.

Place the mold on the baking sheet, put it into the lower shelf of the preheated Dongling K30A oven, and bake for about 36 minutes.

Take out the baked cake immediately, knock out the heat, place it upside down on a drying rack, and wait until the cake cools before unmoulding it.
