Overview
Water chestnut, whose scientific name is water chestnut, has purple-black skin, white meat, sweet and juicy taste, crisp and delicious, and is known as underground snow pear. Northerners call it Jiangnan ginseng. It can be eaten as a raw fruit or as a vegetable.
