Wash the ribs.

Put it in a pot, add cold water, bring to a boil over high heat, skim off the foam, remove and drain.

Heat the wok and add a small amount of vegetable oil.

After the oil is hot, add the pork ribs and fry slowly over low heat.

Fry until the surface is slightly brown, then set aside.

Leave the base oil in the wok (or leave it out), add the crushed rock sugar, and bring to a boil over low heat.

Boil the rock sugar until light brown, add the pork ribs and stir-fry evenly.

Add star anise, ginger slices, dried chili segments, Sichuan peppercorns, soy sauce, cooking wine, and water, mix well, bring to a boil over high heat, then turn to low heat and simmer.

When the juice is almost dry, taste and add appropriate amount of salt.
